Dear Food Provider, 

Not sure what the big deal about coeliac disease is? Annoyed that your coeliac customers are a pain to cater for? Sick of having to cater for so many dietary fads EVERY time you want to create a new menu?

Well let us paint a bit of a ‘coeliac disease’ picture for you…

Imagine that your body decides that it is going to attack itself. It decides that a harmless molecule is a danger and therefore takes action to destroy it, with huge collateral damage caused as a result of the attack. This collateral damage then impairs the functionality of a key organ needed to sustain the life of the body, through the provision of essential nutrition to other vital organs. The healthy functioning of these other vital organs subsequently become seriously impaired. Your body then effectively becomes malnourished and implodes, one symptom at a time.

You would think that that was a pretty big deal.

Well let us introduce you to coeliac disease.

A disease that effects 1 in 70 Australians.

A disease that causes serious ongoing health issues through prolonged malnutrition (malabsorption of nutrients). Producing symptoms such as chronic anaemia, severe abdominal pain, osteoporosis, nausea, migraines, eye issues, brain fog, skin issues, joint pain, vomiting, diarrhoea…as well as an increased risk of bowel cancer…

So no, we can’t remove the wafer from the dessert and then eat it as it ‘will now be gluten free’. No we cannot eat the gluten free cake on the open shelf underneath the gluten-containing cakes. No we can’t eat the chips cooked in the same fryer as the flour battered fish. And no, we cannot eat the cheese that is on the plate with both gluten free and gluten crackers or the dip that has been used with wheaten crackers.

One crumb can be all it takes to trigger the autoimmune reaction in a coeliac that causes their body to start attacking itself.
