Gluten Free Persian Love Cake
A favourite Mediterranean inspired gluten free cake created by author & recipe developer Sophie Stokes from www.insofiaskitchen.com.au
Ingredients
3 cups almond meal
½ cup gluten free plain flour
½ cup caster sugar
½ cup brown sugar, firmly packed
125g unsalted butter, softened
1 teaspoon salt
2 large eggs, lightly beaten
1 cup Greek yogurt
1 tablespoon ground nutmeg
½ cup pistachios, roughly chopped
1 tablespoon icing sugar
Method
- Preheat oven to 180*C. Grease and line with baking paper an 8” spring form baking tin.
- In a large bowl, combine almond meal, flour, sugars, butter and salt. Rub with fingertips until mixture resembles breadcrumbs.
- Spoon half of this mixture into baking tin, pressing down to cover base.
- With remaining mixture, add eggs, yogurt and nutmeg, beating with a wooden spoon until smooth and creamy.
- Pour wet mixture over base, smoothing out to a flat surface. Sprinkle pistachios over cake and bake until golden and cooked through for approximately 35 – 40 minutes. Cool, sift icing sugar on top.
Serves 8 – 10
