At Christmas this year my mum spoilt me with this gorgeous plate full of gluten free pancakes! It is a very easy recipe she just adapted using gluten free flour, so I thought I would share it with you so that you can create this yum foodie moment for yourself 🙂 Jane x
Ingredients:
1 ¼-1 ½ cups gluten free plain flour
3 tsp baking powder
½ tsp salt
1 tbsp sugar
1 ¼ cups milk
1 egg
3 tbsp melted butter
Method:
Sift the dry ingredients together in a bowl
Combine the milk, egg and melted butter separately
Create a well in the middle of the flour mix, pouring the milk mixture into the centre & gradually mixing in the flour mix until you have an even consistency.
Add more flour if the mixture is too thin/more milk if too thick.
NOTE: The thicker the mixture, the thicker the pancakes will be, so experiment a little to get the batter consistency just right for how you like them!
Use a 1/4 cup measure to pour batter into a prepared non-stick small round pan on a med-high heat
Cook approximately 2 min on each side.
Serve pancakes with your choice of fresh fruit, ice-cream and maple syrup (be careful to use gluten free maple syrup).
